Production process:
1. Batter Mixer
This makes the batter for the system to produce the wafers. This system constitutes of :batter mixing tank and
batter storage tank and pumps and fittings for transferring batter. Batter mixing tank, batter transfer pump and
pipes and fittings all adopt Stainless Steel 304 food quality material. Good tightness is required for electric con
rol cabinet, Capacity of the batter will be 25kgs of flour per batch which can be converted into about 65 kgs
atter within 5 minutes of mixing. Batter Mixer will have flat type lid to cover the mixing units.
2. Model KHG-27Gas Oven
This is very important equipment in the wafer production line. The wafer baking system uses LPG for heating ofthe baking plates. It is controlled by a PLC made by Wafer Making Machine wafer biscuit machine production line brand. The functions of the baking oven are fully automatic from spreading batter on the plates to the procedure of baked wafer sheets coming out of the oven. Baking is even and produces good quality wafer sheets for next procedure. In PLC there is a PID controller which is used to control the temperature of the baking plates automatically .The collection of required signal of PID is supplied by infrared sensor which is produced by RAYTEK of U.S.A .The oven status display and the data reset are supplied by HAKKO by Japan. Contactor switch is supplied by SCHENEIDER Company in China. The stepping wheel bearings and the pressing roller bearings of the mould rack are SKF. The pneumatic components are supplied by FESTO. The main drive will be SEW Eurodrive of German brand. There is an automatic spurring-cleaned device at the bottom of the baking oven.There is second pressure relief valve.
3. Wafer Sheet Connecting Machine
This machine conveys the baked wafer sheets to the cooling tunnel. Its smooth handling makes sure the hot wafer sheets that come out of the baking oven will not be damaged. All parts contacting with the food are made out of Stainless steel. Conveyor motor is supplied by SEW, and Pillow Bearings are Chinese product.
4. Vertical Wafer Sheet Cooler
This machine raises the wafer sheets to have natural cooling. This machine relieves heat stress applied on the wafer sheet during baking process. Unless the sheets are cooled smoothly, it tends to break even for a small impact during further processing of the wafers due to heat stress. This machine also called stress-reliving machine. This is an improved system according to your requirement increasing width & height of the carry arms. The part which may contact to the food is made of stainless steel.
5. Wafer sheet collecting machine
If there is any trouble occurred on cream spreading machine or cooling tunnel, this machine will collect the eligible wafers automatically after receives the order from PLC, and the collected wafers can be reused after the trouble is resolved. The motor is SEW, while the pillow bearings are Chinese product.
6. Cream Spreading Machine
This machine is an important piece of machine in the wafer line that determines the number of wafer sheets and cream layers that should be made. This machine has functions such as: applying cream layer on to the pre cooled wafer sheets, drawing evenly the cream layer and making the book of wafers sheets with different layer of cream and sheets, then applying slight pressure to hold the wafer/cream together. Numbers of cream layers and wafer layers can be adjusted as required to the count of 3, 4, 5 etc. The machine will count them automatically according to the adjustment made. There is a device of controlling temperature automatically and constantly on the roller of filler. The layer thickness can be adjustable, too.
7. Vertical Cooling Tower
The cooling tower is mainly used for cooling down the cream filled wafer, which makes the wafer better and hard enough for cutting and packing. The capacity and feature is connected with the required cooled time for wafer, the cooling time can be set in the range of 15 to 25 minutes depending on different biscuit. it can be adjusted from 13ºC to 15ºC under room temperature, the wafer is placed on the holder on the conveying belt is cooled through the cooling tower. The main conveying belt is step with in-out 2 conveying machine. Available to put in and put out for the non-defective wafer, it can self-clean up after ending production.
8. Laminator / Transportation System
The whole machine is in Stainless steel execution. The conveying belts adopt the food grade ones, and this machine is driven by chain drive with chain tensioning device. All tighteners are driven by bearings, and the belt wheels are in PE or MPPO material. There are holders under the belt that is used to avoid the wafer breaking.
9. Blade-type Cutting Machine
It is a blade cut machine to cut the cream filled wafer sheets depending on the final size required. The cutting size can be continently adjustable. The antiseptic treatment is made after the machine frames and racks are made by carbon node steel, and the table are polished carbon steel with chrome plating
10. Separating machine
It is used to separate the wafer pieces after cut from different directions, so that the wafers can go
into the next step.
11. Cream Mixer
This is a stainless steel mixer for the manufacturing of cream for the production of cream filled wafers. It consists of a beater type mixing arrangements that is driven by 4.5 Kw motor and the turnover system to remove the cream from the mixer has a power of 0.55Kw motor. Mixing time is varied depending on the cream composition. Cream mixer has SEW/ABB Eurodrive Gear Motor and Heating & Cooling jacket. The heating & cooling jacket is constant open, and the cooling jacket must be done the watertight test in 0.05Mpa. The machine will be stopped if the top lid is opened, which is a type of safe device. Two trolleys and cream shovel are supplied with the machine.
12. Smashing Machine
In the wafer line, there is wastage from the cutting process that needs to be reused in order to minimize the overall wastage of wafer baking system that is about 2%. This equipment is used to grind the discarded wafer in to a reusable form. The ground material can be used as additive cream depending on the requirement. The smashing or grinding machine is constructed out of Stainless Steel material to maintain hygiene of the reusable products. The grinding system is driven by a 3Kw SEW/ABB motor to have high power and efficiency.
